Fresh picked blueberries during the late summer can be frozen and served practically fresh, home canned beets, and baby spinach greens make it possible to serve any time of the year. <br />

Ingredients:<br />

Equivalent of 1 head of spinach<br />
1 pint jar pickled beets quartered<br />
1 1/2 cups blueberrries<br />
3/4 cut roasted walnuts, coarsely chopped <br />
3/4 cup feta cheese (or Sunny Pine chevre works fabulous too)<br />
fresh ground pepper to taste<br />

Sherry vinaigrette optional <br />
<br />
Assemble ingredients and sprinkle with nuts, cheese, and black pepper. Dress with vinaigrette if you like, but we tend not to need one as the beets are pickled in vinegar and the flavor infuses into this salad beautifully.<br />

This is especially true for Basecamp winter guests who have played all day and are looking forward to a meal that hits the spot! The kale and goat cheese keep it lively and healthy. Just to note that we use our frozen garden kale for this recipe- it is blanched immediately after picking during the summer harvest, cooled and bagged in freezer bags for winter freshness. <br />

4 cloves garlic<br />

1 bunch kale (1/2 lb) - fresh or frozen (substitute spinach if you like)<br />
1/3 cup olive oil<br />
1/3 cup goat cheese, plus more for topping<br />
2 Tbls + hot pasta water<br />
sea salt and freshly ground black pepper<br />
fresh lemon juice<br />
12 oz dried penne pasta<br />
fresh thyme or parsley (flowers too if fresh)<br />

Bring a large pot of water to boil and add the garlic and shallots. Boil for 2-3 minutes, stir in kale and cook for another 10 seconds. Fish out your greens, garlic and shallots with a slotted spoon and add to a food processor. Puree these ingredients with the olive oil and goat cheese. Add a couple of tablespoons of hot pasta water to thin if necessary Season with salt and plenty of black pepper. Add a bit of lemon juice.<br />
<br />
Use the same water to cook the pasta. Drain and toss the pasta with the green sauce and serve with fresh thyme or parsley on top.<br />

We used homegrown purple, cranberry red, and yukon gold potatoes, but one can use any smaller and more flavorful potatoes you can find. A nuttier black lentil will also be best for this dish because they hold their shape and do not get mushy over time. Brussel sprouts are not everyone's favorite vegetable, but we haven't had anyone turn these away yet!<br />

Ingredients:<br />
Mint Sauce<br />
1 cup fresh mint leaves<br />
1/2 serrano chile pepper - deveined and seeded<br />
2 Tbls olive oil<br />
1 tsp salt<br />
1 tsp honey or agave nectar<br />
1 Tbsp lemon juice<br />
<br />
Lentil Dish<br />
6-8 small potatoes, cut into 1 to 1/2 inch cubes (do not peel)<br />
2 cups cooked black or brown lentils<br />
12 brussel sprouts, halved or quartered<br />
1/4 cup almonds (sliced or whole crushed) - toasted<br />

1/3 cup plain yogurt<br />
2 dates pitted and chopped (optional)<br />

Start by making the mint sauce. Combine mint leaves, serrano, olive oil, salt, sugar and lemon juice in a food processor. Pulse until the chilis are finely chopped.<br />
<br />
Cook potatoes on a skillet with a bit of olive oil and salt. Make sure they cook all the way through but do not make them mushy. Add water and cover the skillet if needed to speed up the cooking process, then brown with the skillet lid off for the last few minutes. While your potatoes are cooking, add almonds to a dry skillet pan and brown until toasted. Set aside.<br />

Add pre-cooked lentils to the potatoes and add the mint sauce, stirring until well-coated. Turn out onto a platter and use the same skillet to cook your brussel sprouts. Add another generous amount of olive oil to the pan and make sure the stove top is on medium to high heat. Add sprouts and crunchy sea salt to taste. Cook until the flat sides are a deep brown color and they carmelize on the edges. Add the lentil dish and top with toasted almonds, yogurt and dates. <br />

We made a monster batch, and so we just kept roasting squashes that needed to be used soon (they were starting to get a bit wrinkled on the edges). Roasting the garlic and squash seems to make a huge difference for my tastes, as would the fresh apple cider instead of apple juice from concentrate.<br />
<br />
<i>Ingredients:</i><br />
<br />
2 medium sized sweet winter squashes (butternut, kuri, butternut, sweetmeat) - roasted<br />
1 large apple<br />
1 onion<br />
2 Tbls olive oil<br />
2 tsp fresh ginger<br />
4 cloves garlic - chopped<br />
2 cups apple juice or cider<br />
14 oz coconut milk<br />
3 cups vegetarian broth or water<br />
2 tsp salt<br />
2 Tbls curry powder <br />
more salt and pepper to taste<br />

Cut your squashes in half and face down on a baking sheet. Roast at 400 degr F until the flesh becomes soft and slightly carmelized. Scoop out seeds and remove skin. Set to the side.<br />
<br />
Sautee the apple and onion in olive oil for about 5-10 minutes. Add ginger, garlic, salt and curry powder and continue to stir. Do not let the garlic brown. Add the squash and the remainder of the ingredients and bring to a boil. Once boiling, reduce to a simmer. Puree completely for a smooth texture, or puree only half for a slightly more chunky style. Both are delicious.<br />

They are flakey and buttery, but not too filling. We use our fresh or frozen herbs from the Basecamp garden!<br />

2 cups flour<br />
2 Tbls grated Parmesan cheese<br />
1 tsp baking powder<br />
1/4 tsp salt<br />
1/3 cup salted butter, chilled<br />
1/4 cup pine nuts (optional)<br />
1/2 cup fresh sage leaves, chopped<br />
1/4 cup fresh parsley, chopped <br />
1 Tbsp olive oil<br />
1 garlic clove (minced)<br />
1 large egg<br />
2 Tbsp milk<br />
1/2 cup shredded Provolone cheese<br />
1 egg white mixed with 1/2 tsp water for the top glaze<br />

Preheat over to 375 deg F. In a large bowl, stir together the flour, Parmesan cheese, baking powder and salt. Cut butter into 1/2 inch cubes and distribute over flour. Blend, or cut butter into mixture until it resembles course crumbs. If using nuts in this recipe, finely chop 1 Tbsp pine nuts with a food processor and scrape nuts into a small bowl. Add herbs such as sage and parsley, oil, and garlic to the pine nuts. Stir egg and milk into herb mixture and add to flour until combined. The dough will be sticky. With floured hands, knead in Provolone cheese and pat dough into 8 inch circle in the center of a buttered baking sheet. Brush egg/water over top and cut into 8 wedges with a serrated knife. Sprinkle the top with the remaining chopped pine nuts or parsley. Bake for 25-30 minutes or until a tester comes out clean. Let cool for 5 minutes before serving and enjoy!<br />

grilled chicken or vegetables, usually served with a side of black forbidden or jasmine rice to
soak up extra sauce. A great side dish or topping is adding fresh mung beans, sprouts, grated carrots, and raw unsalted peanuts.<br />

Yields: 4 1/2 cups<br />
Prep time: 30 minutes<br />

Ingredients:<br />
1 tsp canola oil<br />
1 small red onion, minced<br />
3 cloves garlic, minced<br />
1 serrano pepper, seeded and minced<br />
4 tsp fresh ginger minced<br />
4 tsp curry powder<br />
4 tsp cumin powder<br />
1 can coconut milk<br />
5 Tbs organic peanut butter<br />
1/4 cup fresh cilantro, minced<br />
5 tsp tamari<br />
4 tsp honey<br />
1/8 cup ketchup<br />
1/8 cup lime juice<br />
3/4 cup water<br />

Heat the canola oil in a medium saute pan over medium heat. Saute the onion, garlic, pepper, and ginger until the onion is translucent.<br />

Add the curry powder and cumin, saute over low heat for 1 minute.<br />

Add the cocunt milk, peanut butter, cilantro tamari, honey, lime juice, ketchup and water.<br />

Bring the sauce to a boil, whisking often. Reduce heat and simmer for 10 minutes before serving<br />

At the Basecamp we grow three varieties of kale and love to find new ways to use them! This salad is always a hit with the Basecamp guests because it presents kale in a new fashion. Massaging the kale transforms it into a silky sweet tasty treat that will delight your eyes and tastebuds! </div>

1 bunch kale </div>

1 teaspoon sea salt</div>

Wash the kale leaves and then spin or pat dry. De-stem kale by pulling leaves away from the stems. Stack leaves and cut horizontally into bite sized pieces. Place kale in large mixing bowl and add salt. Massage the kale with your hands for 2-5 minutes or until it begins to soften and almost wilt.</div>

Toast the sunflower seeds by placing them in a cast iron pan over medium heat. Stir constantly until they turn color and release a nutty aroma. </div>

Stir onion, currants, apple and sunflower seeds into kale. Dress with oil vinegar. Taste for salt and vinegar, adding more if necessary. When at desired flavor, toss in cheese. This salad will keep for several days and still be delicious! </div>

Even though summer is over there is still plenty of autumn sunshine
and beautiful scenery to be explored in the mountains surrounding the
Methow Valley. The changing of seasons means bright fall colors are bursting all around, making for some awesome hikes. We have had an absolutely amazing summer of hiking and
trail running around the Basecamp and wanted to share some of the nearby
routes that we have found and loved. <br />
<br />
<b>Jacks Trail/River Run-</b><br />
This
is a trail that we frequently run because it has stunning views of the
mountains around Mazama. This time of year, it is accessible right from the
Basecamp's front door since the Methow River has slowed down and
lowered so it can be crossed without getting your feet wet. There are
about 10 miles of trail that remains relatively flat along the valley
floor that opens up to a grassy meadow at one end giving great views of
Goat Wall, Driveway Butte, Sandy Butte<br />

<b> Monument Creek-</b><br />
A nice hike that's a five mile drive from the Basecamp. The trail gradually follows Lost River upstream to the Eureka Creek crossing (3 miles), and continues for up to 20 miles. It is a great out and back hike for any distance. Beautiful riparian habitat and mountain views.<br />

<b>Pipestone Canyon-</b><br />
A short distance outside Winthrop with beautiful rock formations and a conifer forest in the base of the canyon. It opens up to a grassy valley and there is also a loop that takes you along one rim of the canyon. This area burned in the summer wildfires; conditions have certainly changed! <br />

Cutthroat pass is a ten mile out and back round trip hike that boasts beautiful views of the peaks along the North Cascades Scenic Highway. Cutthroat Pass can be reached from the Rainy Pass trail head as well as the Cutthroat Lake trail head. If you continue along the PCT from the top of Cutthroat Pass you will reach Snowy Lakes in about five miles. Snowy Lakes is a popular backpacking destination that has two pristine lakes surrounded by mountain peaks.<br />

<b>Goat Peak-</b><br />
Goat Peak is a trail in Mazama that takes you to the top of a peak over 7000' tall. Luckily you are able to drive to about 5000' up so the hike is only about a four mile round trip. At the top you will find the fire lookout tower that has been manned by a cheerful character named "Lightning" Bill for 20 years, if you get the chance to meet him will we gladly share his poetry and artwork with you. This hike gives you a great view of the valley and the area around Mazama.<br />

<b>Windy Pass/Holmans Pass-</b><br />
These trails are accessible from the top of Harts Pass and follow the PCT towards Canada. We encountered some late summer snow on the hike which made for some wet hiking but made the scenery even more beautiful. This trail takes you into the Pasayten Wilderness which is pristine and some of the most gorgeous terrain we encountered this summer.<br />

south winds, incredible viewscapes and great group of 30 enthusiastic birders.
Birders were welcomed at the Basecamp for a pancake birding breakfast, and then
carpooled up to <b>Harts Pass with Kent Woodruff </b>as our birding guide. The group
casually observed 60 raptors throughout the day, including 22 sharp-shinned
hawks, 7 merlins (one who caught and consumed a dragonfly on the wing), 4
goshawks, 4 prairie falcons, 3 golden eagles, 2 swainson's hawks, 1 broadwing
hawk, 1 peregrine and many others... The group also observed horned larks,
American pipits, ravens and clarks nutcrackers. </span><br />

by discussing "shape and behavior" as the key components for raptor
identification. For our two similar sized and shaped accipiters, the
shrug-shouldered and sharp square tail helped remember the sharp-shinned hawk,
while the C-shaped curve in a Coopers hawk tail helps distinguish it from its

and nature camp this past week at the North Cascades Basecamp, entitled Garden Camp. We had 13 kids join instructors Deirdre Cassidy, Kim Romain-Bondi and
Raechel Youngberg. Our week kicked off with in-depth exploration of vegetable plants in the beautiful Basecamp garden. </span></span></span><br />

The kids then drew a picture inspired by the garden, which they transformed

The kids used big luscious cabbage leaves gathered from the garden as a template
for creating concrete birdbaths. The cabbage leaves left beautiful and intricate
impressions onto the concrete. These birdbaths will be a wonderful addition to

We smelled the calendula flowers while learning that it can be made into a salve to help treat rashes, as well as cuts and scrapes. We tasted spicy mizuna, a Japanese mustard green, that is a great addition to any salad. We crushed coriander pods in-between our fingers while inhaling its pungent aroma. The last seed we collected was swiss chard, a bright dark leafy green that can be transformed into a variety of dishes. </span><br />

opportunity for both human and feathered friends to become socialized with each

twigs, weeds, and other natural materials down near the river. Our designs were
inspired by Andy Goldberg, an artist famous for transforming natural materials

Deirdre Cassidy, Kim Romain-Bondi and Raechel Youngberg. The rain may have
filled the sky for the better part of the week but we didn’t let it dampen our
spirits! We warmed up our creative juices with fun drawing classes led by Deirdre and Kim, and practiced our blind contour
drawing with flowers and then faces to hilarious results.</span></span><br />

which were the perfect art project for this week as they
allowed
us to stay dry inside the classroom, but with the barn doors opened up
for fresh summer air. The kids worked from designing their mosaic, to
applying glass, grout, and finally wiping the whole thing clean for
beautiful and colorful trivets to take home with them! </span></span><br />

<span style="font-family: Georgia,"Times New Roman",serif;">We just finished our first Art and Nature Camp at the North Cascades Basecamp, titled Habitat, Habitat, Habitat. We had 12 kids join Deirdre Cassidy, Kim Romain-Bondi, and Raechel Youngberg for a great week. We started our week with nature walks and discussions of habitat, and native wildlife's adaptations to to live in Methow Valley. Our sketch books came in handy as recorded our observations and created imaginary creatures with a random variety of adaptations, such as long claws, a shadow tail, big ears, round body, and a nut-cracking bill. The kids created incredible paper mache animals based on what we had learned, some with realistic features in the end, and others with folk art colors of their imagination. Games in the grass and a fair amount of waterplay kept the days fun and cool. The photo below shows our floating habitat we found in the swimming pond, where we identified 7 species of insects or animals that were using it. We can't wait for next weeks camp- Native Plants, Trees, Flowers, and Leaves.</span><br />

We decided to make a couple of different types of fruit leather the other night but the recipe we will feature is for apricot fruit leather. Homemade fruit leather is an excellent way to use up overly ripe fruit and tastes absolutely amazing any time of the year.<br />
<br />
<b>Homemade Apricot Honey Fruit Leather </b><br />
For our fruit leather we used a dehydrator but you can easily adjust this recipe to be baked in an oven. <span style="font-size: small;">Yield: 2 plates fruit leather-about 10 fruit roll ups</span><br />
<br />
<b>Ingredients</b>:<br />
8 cups organic ripe apricots<br />
1/2 cup homemade grape juice (you can substitute 1 cup water if necessary)<br />
1/2 cup fresh squeezed lime juice<br />
1/2 cup organic white sugar
1/2 cup fresh organic honey<br />
<br />
<b> Directions</b>:<br />
1.) Cut apricots in half and remove the pits<br />
2.) Combine apricots, sugar, honey, grape juice, and lime juice in a large sauce pan and place over medium-low heat.<br />
3.) Continuously stir and mash the apricot mixture for 20-30 minutes while it remains on medium-low heat.<br />
4.) Blend mixture in a stand blender until smooth.<br />
5.) Line dehydrator plates with parchment paper<br />
6.) Pour mixture onto lined dehydrator plates, ensure that the mixture spreads evenly over the plates or else dehydrating time will vary between sections.<br />
7.) Dehydrate at 150 degrees F for around around12 hours.<br />

There was a brief introduction in the Ecology Classroom, where Kim introduced myriad different kinds of adaptations, comparing and contrasting them to the methods that humans have developed to cope with the cold. We all have the same needs to survive, and each creature has its own methods of achieving these basic survival essentials. <br />

The kids then strapped on snowshoes and got to tromp around the forest surrounding the Basecamp looking for tracks and exploring different animal habitats with Kim and Steve. <br />

Finally they were introduced to the world of subnivean creatures, who burrow under the snow and live in tunnels and dens in the low layer of snow near ground, where the snow provides insulation from the cold winter air and traps the animals' body heat around them. Burrowing was something the kids could certainly relate to and they grabbed their "claws" (shovels) and got to work excavating the 4-8 foot snow piles around the warming hut with gusto. We were even able to take some temperature readings in some of the burrows and compare them with the air temperature to see the effects of snow insulation. <br />
<br />
Much fun was had by all, and, speaking for myself at least, we learned a lot about how many different ways there are to adapt to the harsh conditions we face.<br />

In another bowl, whisk together the maple syrup, if using, the milk, egg, half of the butter, and the vanilla.<br />

Arrange the bananas in a single layer in the bottom of the prepared baking dish. Sprinkle two-thirds of the berries over the top. Cover the fruit with the oat mixture. Slowly drizzle the milk mixture over the oats. Gently give the baking dish a couple thwacks on the countertop to make sure the milk moves through the oats. Scatter the remaining berries and remaining walnuts across the top.<br />

Bake for 35 to 45 minutes, until the top is nicely golden and the oat mixture has set. Remove from the oven and let cool for a few minutes. Drizzle the remaining melted butter on the top and serve. Sprinkle with a bit more sugar or drizzle with maple syrup if you want it a bit sweeter.<br />

<span style="font-family: inherit;">3 cups water</span><br />
<span style="font-family: inherit;">1 1/4 cups coarse ground polenta</span><br />
<span style="font-family: inherit;">2 tablespoons olive oil </span><br />
<span style="font-family: inherit;">1/4 teaspoon sea salt</span><br />
<span style="font-family: inherit;">2 cloves of garlic, minced</span><br />
<span style="font-family: inherit;">1/2 teaspoon grated lemon zest </span><br />
<span style="font-family: inherit;">2 cups peeled and diced butternut or other orange squash</span><br />
<span style="font-family: inherit;">1/2 cup bleu or feta cheese</span><br />
<span style="font-family: inherit;">10 roasted tomatoes</span><br />
<span style="font-family: inherit;">8 ounces shredded mozzarella</span><br />
<span style="font-family: inherit;">Chopped walnuts </span><br />

<b><span style="font-family: inherit;">Directions:</span></b><br />
<span style="font-family: inherit;">1. Bring 3 cups of water to a boil in a medium saucepan and whisk in polenta, 2 tablespoons olive oil, salt, garlic and lemon zest. Nice to add in grated Parmesan cheese if you like at this stage as well. Stir for five minutes over medium-low heat before pouring into a 9-by-18-inch baking sheet brushed with olive oil. Cool for an hour in the fridge.</span><br />

<span style="font-family: inherit;">2. Cube and bake a butternut or other sweet and orange squash for 20+ minutes at 375 degrees, until soft but still firm.</span><br />

<span style="font-family: inherit;">3. To roast tomatoes: Put fresh, whole tomatoes on a cookie sheet, and drizzle with olive oil and sea salt. Let roast in the oven for 20 minutes on 400 </span><span style="font-family: inherit;"><span style="font-family: inherit;">degrees F. </span>or until golden brown and starting to carmelize. Remove, keeping juices for the lasagna. </span><br />

<span style="font-family: inherit;">4. Remove cooled polenta from the fridge and brush with olive oil. Evenly spread squash, roasted tomatoes with juices, 1/2 cup bleu cheese and shredded mozzarella over the polenta. </span><br />

<span style="font-family: inherit;">5. Cover with foil and bake for 30 minutes at 375 degrees. Finish by removing foil and baking until top is golden brown (10 to 15 minutes).</span><br />

<span style="font-family: inherit;">Garnish with chopped walnuts. Although we serve this dish without a top like an open face polenta pie, you can also reserve 1/2 of the polenta to cover the pie and now call it a lasagna! </span><br />
